Steel-cut Oatmeal
Steel cut oats are oats that haven't been smashed flat like "regular" oatmeal. Their texture is much more coarse, like bulgur. I vastly prefer these to normal oatmeal.
This is based on Alton Brown's recipe from http://www.foodnetwork.com/recipes/alton-brown/steel-cut-oatmeal-recipe/index.html, but is simplified to use ingredients I have on hand all the time. I also adjusted the portions to what I eat for breakfast.
- 1 tsp butter
- 1/2 cup steel cut oats
- 1.5 cups boiling water
- 1/3 cup milk
- 1 tsp brown sugar
- 1/8 teaspoon cinnamon
- In a medium saucepan, melt the butter and add the oats. Toast, stirring occasionally, while the water comes to a boil.
- Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.
- Combine all but 2 tbsp of the milk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes or until it's the consistency that you like.
- Remove from heat. Mix the remaining milk, brown sugar, and cinnamon into the oatmeal. Maybe add some berries to it. Serve.
