Steel-cut Oatmeal

Steel cut oats are oats that haven't been smashed flat like "regular" oatmeal. Their texture is much more coarse, like bulgur. I vastly prefer these to normal oatmeal. This is based on Alton Brown's recipe from http://www.foodnetwork.com/recipes/alton-brown/steel-cut-oatmeal-recipe/index.html, but is simplified to use ingredients I have on hand all the time. I also adjusted the portions to what I eat for breakfast.
  • 1 tsp butter
  • 1/2 cup steel cut oats
  • 1.5 cups boiling water
  • 1/3 cup milk
  • 1 tsp brown sugar
  • 1/8 teaspoon cinnamon
  1. In a medium saucepan, melt the butter and add the oats. Toast, stirring occasionally, while the water comes to a boil.
  2. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.
  3. Combine all but 2 tbsp of the milk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes or until it's the consistency that you like.
  4. Remove from heat. Mix the remaining milk, brown sugar, and cinnamon into the oatmeal. Maybe add some berries to it. Serve.
